Hi friends! I’m about a million weeks pregnant (aka 37 weeks pregnant) and am having a hard time sitting down to do any blog posts! I would like to say I’m busy nesting and reorganizing all our closets, buuuuuut I’m just napping. Everyday. Keeping up with Mack is straight exhausting and when he takes a nap I do too. This is making me way less productive but also way more enjoyable to be around come 5 PM. Now I wanted to hop on here to share a Lemon Cookie Recipe I’ve been making since college. I actually posted this recipe back in 2011 but the pictures are terrible. These amazing cookies deserve pretty pictures!
The worst part of making these cookies is that you can eat 12 of them before you blink. They are so light and fluffy, not too rich and perfect for summer!
Lemon Cake Mix Cookies
Ingredients:
1 Box Lemon Cake Mix
6 oz Cool Whip (semi softened)
1 Egg
1 tsp Vanilla
Powder Sugar
Directions:
1. Preheat oven to 325 degrees.
2. In a large mixing bowl combine cake mix, cool whip, egg, and vanilla.
3. In a small bowl pour about 1 cup of powder sugar.
4. Using a 1 tbsp cookie scoop, scoop cookie dough into powder sugar bowl. The dough is super sticky so to make things easier dip your scoop into the powder sugar before you scoop the dough. Make sure dough ball is completely covered by the powder sugar before putting on cookie sheet.
5. Bake for 11-15 minutes or until the bottom of the cookies are slightly brown.
I hope I can post a few more times before #2 (still no name 🤷🏼♀️) makes his arrival! No promises though... 🤪
